Yummy and SUPER easy Dinner

I am so bad about waiting till the last minute to plan dinner.  By that I mean, we make a trip to Wal-Mart just about every day to pick up the fixin's for dinner and our random buys (juice, milk, granola bars, baby food, wipes, diapers, etc).  I would prefer Kroger, but it is too far for my every day habit.

Today I went with no idea in my head of what to make.  I was wandering around clueless.  I knew that I wanted it to be healthy and filling.  I picked up chicken, still with no clue.  I found myself wandering down the spice isle, and ran across McCormick Bag and Season.

How amazing, a bag for steaming and the spices ready to go (I am not a good spicer, FYI, so to me, this was AMAZING).  I picked up some veggies, and we were ready to roll.

First I trimmed the remaining fat off of the chicken.
*The package called for 2.5 pounds of chicken parts, but I only used 1.25 pounds of chicken breast.*

Next I used part of the packaged seasonings and seasoned both sides of the chicken.
*I left some of the remaining seasonings for the veggies*

I put the chicken in a single layer in the bag and put the bag into a glass pan.

I chopped up my veggies.  I used squash, zucchini, carrots, and then I added some red potatoes.
*2 things I have learned from watching too much TV
1st-Buy organic fruits and veggies if you will be eating the skin (Dr. Oz)
2nd-Chop everything the same size, so that it will all cook at the same pace (Robert Irvine, Dinner Impossible)
*I didn't buy organic, because with produce prices being out of control, it was just too expensive, so I thoroughly washed my veggies, and cut off the skin of the pots.
*I tried my best to cut the veggies the same size, but I didn't do too great.


I seasoned the veggies with the leftover seasonings in the package.
I put my veggies on top of my chicken in the bag.


The you seal the bag loosely, with the given tie, and cut 4 small holes in the bag.

You bake in a preheated oven on 350 for an hour.  

*Using less chicken, I should have used less time.  My veggies were a little mushy, but the chicken was fork tender.*


My verdict, a HUGE thumbs up!!  The seasonings were great, and it was SO easy!

I've used some of those seasoning bag mixes in the past and they are pretty good, though I really don't cook much anymore since it's usually just my wife and I at home. We eat a lot more things like salad now.

Here I shop at Ralph's Supermarket which is owned by Kroger and pretty similar. I'll probably start doing a lot more shopping at Walmart though because their prices are usually so much cheaper. I bought a few comparison items the other day and they were almost all about a dollar cheaper at Walmart--that's a lot!

Yummy! The seasoning mixes can really be a lifesaver sometimes! Something to notice as you're using them... look at the ingredients so you can start creating those flavor profiles on your own (since you mentioned you have a little trouble with spicing). This also lets you control what goes onto your food a little better... lots of times the pre-mixed stuff has a ridiculous amount of sodium... but you could take their same basic ingredients and just be able to control the amount of salt! :)
