Oh How Pinteresting

It has been a very long time since I have linked up with The Vintage Apple for Oh How Pinteresting, so I thought today would be a great day to join back in.

This edition of Oh How Pinteresting is going to be about our surprise Baby #4.  I have become addicted to going through my pinterest and pinning things for our baby girl. 

Here are some of my favorites:

Even though I am not really working out, I would love this tank from Ruffles with Love.

 
Being the Rangers family that we are, I would love this blanket for the new baby!
 
Since this is baby #4, I have decided that I need a cute gown to deliver in!  This one has access down the back and for breast feeding.
 
I hate when random people touch my growing belly, so I am thinking this shirt is a must!

 
I LOVE these and will definitely need them for baby girl!!

Pumpkin Muffins

Pumpkin muffins were the big hit on Pinterest this weekend, did you see them?
It is super easy, really cheap, and a lot healthier than regular cupcakes.

I already had pumpkin on hand to make pumpkin bread, but decided to make these instead.
I had no idea that they would be such a huge hit with my kids.
They absolutely loved them.

Here is the process {It's So Simple}

Get some canned pumpkin and cake mix, you can use any that you like. 
I saw spice cake and chocolate cake being used as well as yellow cake.

Pour just those 2 ingredients into a bowl.


I used a hand mixer, but you can use whatever to mix up the batter till smooth.
Let your little one taste because he is so excited that you are making "CAKE"

Divide up into muffin tins.
{Please excuse the gross look of my pans!!}

Let your oldest taste as well.

And because there are only 2 beaters, let your middle child have the bowl.

Cook at 350 for 20-25 minutes {more or less depending on how big you make your muffins}. 
I think ours could have used 5 more minutes, even though the tooth pick came out clean.
Just use your best judgement when baking, everyone's ovens are different.

Let them cool and try not to devour the whole batch!
We did not add any frosting, but you certainly can!!

How to Make Ocean Wave Cupcakes and Mickey Cookie Pops

We had a Mickey Mouse/Under the Sea birthday party for Maddi and Brayden this past weekend, and I made a few items special for the party.

Instead of paying $20+ for a cake made from Wal-Mart, I decided to make cupcakes for both kids.  Ocean waves for Maddi and Mickey Mouse for Brayden, both seen from Pinterest.

The ocean waves were really easy.
All I did was use regular white cake mix, prepared exactly from the box.
After I spooned the mix into cupcake liners, I used a toothpick and blue food coloring to make the swirls.
I dipped the toothpick into the food coloring and swirled it around in the mix till I was happy with how it looked in the cupcake liner.
Then I baked it from the directions on the package for cupcakes.
Then frosted and added sprinkles (per Maddi's request).
Super easy!! 

This is my before picture.  In the setup process, I forgot to take a picture before I frosted.
Here is a close up of the cupcakes and the cake.  I used the same process for the cake.

 After I saw the Mickey pops on pinterest, I knew that I had to make them myself.  They were super easy.

Items needed to make Mickey Pops:

Candy Melts: Red (for pants) and Milk Chocolate (for ears) {From Michaels or Hobby Lobby}
Bag of Lollipop sticks {From Michaels or Hobby Lobby}
Bag of smarties (sort out all the white ones) {Dollar Tree}
Oreos (I think double stuff would work best for pops, I however used regular and they were hit or miss (will explain later))
Bowl to melt red candy {From your house ;)}
Wax or parchment paper to lay oreos on to harden



Here are some of my pops drying before I added their ears

Step 1: Add some red candy melts to a bowl and heat on 50% power for 30 second intervals till melted.

Step 2: Dip half of an oreo in melted red candy.

If Making Pops, Step 3: Stick the lollipop stick into the bottom, through the frosting and squeeze cookie back together.
*This is where I think a double stuff oreo would work better.  I used just regular oreos and the frosting didn't seem thick enough.  A lot of my pops broke or didn't hold together very well once the candy hardened.  I had orginally made 10 or 11, and ended up with 6 on the table.

Step 4: Place cookies on wax paper to harden.  Add 2 white smarties to red candy area for the buttons before it hardens.

Step 5: Let dry.  The longer the better.  I let mine sit over night.

Step 6: Bring some water to a boil to melt the chocolate melt for the ears.  I dipped a little piece of the chocolate into the water till soft (be VERY careful) and pushed it onto the top of the oreo for the ear.  Do twice for each oreo.  Let cool again.

Step 7: Enjoy your Mickey pops or Mickey cookies!

What Have You Been Up To?

Here's what I have been up to:
  • Working out is on my mind every single day, it consumes my thoughts!  It is crazy how much my attitude has changed, and I actually want to work out, no I crave working out.  I am slowly falling in love with running, and I absolutely love to Body Rock (a 12 minute workout that has me sweating more than I ever thought I could)!  I love the saying, "Sweat is fat crying."  I want my fat to cry every day!! 
  • When I am not working out, I sit on the computer and "pin" workouts and healthy meals and snacks from pinterest (feel free to follow me).
  • With that being said, I have changed my eating about 80%.  That is a huge step for me.  I know that I want to do better, eat more cleanly, so to speak, but I also know it will take some time.  My hubby is not there yet, and since I still have to feed him, I still have to make foods he likes.  I have started swapping salads and veggies for chips and tots, and that is a HUGE start.  I have also swapped ice cream for Skinny Cow products and Oreos for Oreo flavored pudding.  I am in the process of giving up cokes, and have started replacing those with diet green teas from Lipton.  It is a long road, but I know the little changes will start making a big difference!
  • I haven't seen any movement on the scale, which is very frustrating.  I figured that I would be down 10+ pounds by now.  I normally would just give up and binge and not look back, but I am changing.  I tend to binge on the weekends, then I spend the week trying to make up for what I did.  I have realized that, and I am going to be more honest with myself.

  • I just got a job!!  It is parttime working 2 nights a week and 10 hours on Saturday!  I am going to be a sales consultant with CarMax!  I am so excited to start, and ready for a challenging job!
  • I am so very ready for summer to start!  I have an overnight trip planned with the hubby, a soccer swim party, and a beach vacation planned already, and that is just in the first few weeks of June.

Pinteresting Friday

Happy Friday and 11-11-11 to you all!!  I could not be more excited that tomorrow is the weekend!  My hubby and I will be going in to work on my mom's house again all weekend.  My kiddos are excited because they get to play with some of their best friends Saturday, and then hang out with my dad and step mom Sunday!!  *Speaking of step mom, have you checked out her website yet??  Cake Art by Sandie!!  Please let her know I sent you  :)*

This week has been full of stress for me, so I am lightening up the mood by doing a Pinterest post!!  Here are some of my favorite things I have found lately!!

Oh How Pintersting!

It has been awhile since I revealed my obsession in Pinterest, so I thought I would share today!!

1st: Welcome to all my new readers!!  Thank you so much for stopping by my blog, and for {more importantly} deciding to stick around!!  I love this little blog so much, and I hope that you will love it too!!  I write about my family life, as well as crafts I attempt and the food I love to make!!  A big thank you again!!

Now onto the fun part, Pinterest!!  If you have never heard of Pinterest you are truly missing out in the biggest time waster/great idea giver ever!!  You have to get an invitation to join pinterest, so if you need one, just send me your email address and I will send you an invite!!!
